Summer Herb Garden Salad

Ingredients:

  • 1 large cucumber, sliced or chopped

  • 2 medium tomatoes, chopped into bite-sized pieces

  • 1 small red or sweet onion, thinly sliced

  • 4 cups lettuce, roughly chopped (Romaine, Butter, or Little Gem work well)

  • 2 tablespoons fresh dill, finely chopped

  • 2 tablespoons fresh parsley, finely chopped

  • 1 tablespoon fresh cilantro, finely chopped

  • 1 tablespoon fresh basil, chopped or torn

  • Salt and pepper, to taste

  • Juice of 1 lemon (or 2 tablespoons red wine vinegar)

  • 3 tablespoons extra-virgin olive oil

Instructions:

  1. Prep the vegetables:

    • Peel the cucumber if desired, then slice or chop.

    • Dice the tomatoes and slice the onion thinly.

    • Rinse and chop the lettuce.

  2. Chop the herbs:

    • Finely chop dill, parsley, cilantro, and basil. Keep some extra leaves for garnish if you'd like.

  3. Assemble the salad:

    • In a large bowl, combine cucumber, tomato, onion, and lettuce.

    • Sprinkle the herbs evenly over the top.

  4. Dress and toss:

    • Drizzle with olive oil and lemon juice (or vinegar).

    • Season generously with salt and freshly ground black pepper.

    • Toss gently to combine, being careful not to bruise the herbs.

  5. Serve:

    • Garnish with a few whole herb leaves on top.

    • Serve immediately for the freshest taste.

Optional Add-Ins:

  • Crumbled feta or goat cheese

  • Avocado slices

  • Kalamata olives

  • Toasted sunflower or pumpkin seeds
